Re: "Take it Easy"? What the hell does that mean?
Here's the most advice I can give you from someone (i.e.- me) with a similar problem from your description.
My mind runs at a million miles per hour unless I have something to occupy it. In the meantime I come up with all kinds of ideas ranging from philosophies to just random fan-fic scenarios. What I do for outlet is RP, mindlessly play games, watch anime, and read manga to preoccupy my mind. I do things that take up my concentration and funnel it away from just running in circles. Granted I don't have a job, so I can't very well say what I would do in that situation to keep my mind occupied, but if I had to compare it to something that would be school. What I do is focus as much as I can on doing what needs to be done at the time (if it's at school, then pay attention/do exercises/etc., when I'm doing homework the same, but I boil everything down to one at a time (naturally that is unless multi-tasking is necessary)).
As for your Ph.D'd friend, I think he's saying that you aren't condensing and analysing your own thoughts, you are just making them.
And for the title question- by, "Take it easy," they mean for you to slow down and calm down. Take everything in slowly rather than burning through it until nothing is left. It's not turning your back on a runaway freight train, it's stopping for that poor guy you're looking at on the tracks (i.e.- you think you're the guy, but your really the train (and I explain this because most people don't get my analogies and metaphors so I end up having to explain them a lot)).
